Recipe Sharing Monday - Meat and Rice

I got this recipe from a friend of mine I used to work with and all she called it was Meat and Rice.  I thought it needed a fancier name when I put it on my blog but I like the simplicity of the name she gave it :)


I made it the first time last week and it made A LOT!!  I was able to make 2 meals out of it.  The first night, I made it just like the recipe says.  The second night, I added some alfredo sauce and some more garlic.  Enjoy!


Meat and Rice
1 lb. ground meat - you can also use ground turkey
1 smoked sausage - diced (I used a hot link to give it some more spice)
1 medium bell pepper - diced
1/2 medium onion - diced
1 can diced tomatoes
1 1/2 C. Minute rice
2 C. water
1 1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. Italian seasoning

Brown meat and cook sausage - set aside and keep warm.
In the same skillet as meat was cooked, boil water, canned tomatoes, seasonings, onions and bell pepper.  Simmer until tender.  Add rice and cover off burner for 5 minutes.
Add meat/sausage and warm back up.  Add grated cheese on top.

For the 2nd night, I put it all in a skillet and covered with 3/4 can of alfredo sauce until it was completely warmed up.

I was on this blog today and she was talking about how women spend so much money on wedding dresses.  It reminded me of my wedding and then I realized I've never blogged about it!!!  It's already been a year and half and I still haven't even scrapbooked it!!!  Where does the time go?
