I am so excited to be in our house and actually have room to bake and cook! My first use of the stove and oven was a success....the house is still standing! I found a recipe online a while back for Rolo Cake Mix Bars. Since David and I are both counting calories, I wanted to make sure I had something or someone to take these to so I wouldn't be tempted to eat the entire pan! Who am I kidding...I was still tempted! David's store is having a huge sale this week and they will all be working extra long hours preparing for the sale and the day of sale. So...they will be consuming all of the calories...not me!
1 Box Yellow Cake Mix
5 oz. Evaporated Milk
1/4 C. Butter, melted
40 Rolo Candies, unwrapped and cut in half
Mix cake mix, milk, and butter...
The batter will be a thick and creamy consistency.
Spray 9x13 pan with cooking spray. Divide batter in half and press 1/2 into the bottom of the pan. Bake at 350 degrees until just set - about 8-9 minutes.
Unwrap and cut Rolos in half...
**This is VERY important - taste test several Rolos just to make sure they taste ok. Taste a couple more if there is any question**
Remove from oven and place Rolos caramel side down on top of bottom batter...
Drop remaining batter on top of Rolos in teaspoon sized amounts - you may have to spread out a little with a knife. Bake for 20-24 minutes until golden brown.
Enjoy these little chocolate caramel bars....unless you're counting calories!!

Of course, the picture you see when you click the link is much prettier than mine but I'm sure mine tasted better! :) The only thing I changed was I added some Buffalo Flavored Pretzel Crisps to the regular pretzels before grinding in the food processor. It gave it a little spicy flavor!
