I recently bought Denise's Daily Dozen and unlike some of the other healthy recipe books I've bought, there are actually some really tasty meals in this one.  Here's one I recently made.
Pasta with Fresh Tomato Sauce
What You Need:
2 oz. dry whole wheat spaghetti
2 tsp. olive oil
1 clove garlic
1 T. chopped shallots
1 C. roughly chopped plum tomatoes
1/2 C. low-sodium chicken broth
Salt and pepper, to taste
2 C. fresh spinach
1/4 C. grated Parmesan cheese
What You Do:
Cook the pasta according to the package directions, drain, and put it aside.  Heat the oil in a large skillet.  Add the garlic and shallots and cook for 1-2 minutes.  Add the tomatoes and chicken broth and cook for an additional 10-12 minutes.  Season with salt and pepper.  Add fresh spinach one handful at a time and stir.  Cook until the spinach is wilted.  Add the cooked pasta and toss to combine.  Serve topped with Parmesan cheese.
I may or may not have had a little wine with this meal :)
