Crock Pot Chicken, Roasted Potatoes, and Cake Vodka Root Beer Floats

I found a couple recipes online and decided to try them both out tonight.  They were so EASY and I LOVE easy recipes!!

BBQ Crock Pot Chicken

4-6 Chicken Breast - you can throw them in FROZEN!!
1 Bottle of BBQ Sauce - we chose Honey Hickory - but you can use your favorite.
1/4 C. Vinegar
1 tsp. Red Pepper Flakes
1/2 - 1 tsp. Garlic Powder or Garlic Salt
The original recipe called for brown sugar but I chose to omit that.

Mix BBQ sauce with all ingredients listed underneath it.  

Place frozen chicken breast in the crock pot.

Pour sauce over it and cook on LOW for 4-6 hours.  I left mine in a little longer; but after 5 hours, I turned it on warm.

This chicken FELL APART and was YUMMY!!  I will definitely be cooking my chicken in the crock pot more often.  "What are those potatoes on the plate?" you ask???  


Roasted Potatoes and Onions

Canola Oil
3/4 - 1 Large Vidalia or other sweet onion - roughly chopped
1 - 1 1/2 Cans of New Potatoes, drained - I used the Del Monte brand
Extra Virgin Olive Oil
1/4 tsp. Garlic Salt
1/8 tsp. Garlic Powder
1/8 tsp. Dried Minced Garlic
2 1/2 tsp. Paprika
Pepper
3 T. Room Temp Butter

1. Preheat oven to 400*.  Grease a 9x13 baking dish.
2.  Heat canola oil in skillet over medium heat then stir in onion.  Cook and stir until onion has softened and turned deep brown, 10-15 minutes.  While onions are caramelizing, toss potatoes with EVOO in large bowl.  Season with garlics and pepper; toss to coat well.  Pour into the baking dish in a single layer. 
3.  Sprinkle onions on top of potatoes, then dot with the room temp butter on top.  Sprinkle with paprika.  Bake uncovered in preheated oven until the outsides of potatoes are crisp, 45-55 minutes.

Could you imagine melting some cheddar cheese on top of these?!?!  Why didn't I think of that before just now??  

These were oh so tasty!  David really really liked them and requested I make them again soon...that is always nice to hear from him :)

Last time I was at the liquor store, I picked up this White Cake Flavored Vodka.

I bought some root beer and I also had some ice cream on hand so I created my own adult version of the root beer float...and I just have one thing to say about it - OMG!! 




David just "loved" pouring the root beer so I could get this picture :) 

These were AMAZING!!  David even liked them...and that says a lot!  He normally just likes a beer or a margarita.  This vodka would also be good in coffee.  I can't wait for winter...I hate drinking coffee  in the summer.

  2. What was the original chicken recipe? I would like to know how much brown sugar.Adding that makes it alittle different than this recipe which is basically what I do on the stove.Thanks so much

Halloween Treats

For work gifts this year, I used these free printables  and these free printables  to make these cute little treats!  I had a lot of fun making them.  I dragged my poor mom and David around to so many stores looking for different colored Tic Tacs and eyeball candy.  I wanted very badly to make the Vampire Vitamins...who knew it would be so hard to find red Tic Tacs! I also made this easy Halloween Bark. What You Need:   1 Package Halloween Oreos Candy Corn 2 Packages Wilton Candy Melts in White Halloween Sprinkles - I ended up using different sprinkles than the ones in the picture...a girl has a right to change her mind, right? Pretzels - I stole these out of our Trick-or-Treat bowl because I felt like it needed something to offset all the sweetness. 1. Crumble up the Oreos.  I crushed some by hand, some in my food processor and broke some in halves and some in fourths.  Spread out on cookie sheet over wax/parchment paper.  Sprinkle candy corn

A Batman Wedding and a $9 Wedding Dress

I was on this blog today and she was talking about how women spend so much money on wedding dresses.  It reminded me of my wedding and then I realized I've never blogged about it!!!  It's already been a year and half and I still haven't even scrapbooked it!!!  Where does the time go? Ok...to the dress.  I knew exactly what I wanted.  I wanted it to be short, satin, and a "pick-up" style dress.  I looked around at David's Bridal and other stores but I just couldn't see spending more than $100 on my dress.  (I've been married before and had the big, fancy wedding - and we see how well that worked out!!)  So this time, I wanted a small wedding and didn't want to spend much.  I walked into Ross one day looking for something else and decided to walk through the dresses to look for a dress for my sis, the MOH.  It was like the clouds opened up and the angels were singing and the sun beamed down on this dress.  You can't really tell from this pic,
